Place in the oven on the low rack for ten minutes. You will hear sizzles, it's ok, it's cooking.
After ten minutes, flip them over and back into the oven for 8 minutes.
Take them out and let rest for 10 minutes.
The internal temp should reach 160 degrees.
If you don't have a meat thermometer, no fear. Pork should have a light pink center. If it's too much pink for your comfort level, just slice and throw back in the oven for a few minutes. It will be fine.
Cut into slices a little over an inch thick and serve.
I would serve this with some quick rice or couscous and some steamer bag broccoli for a quick fix.
Fast, easy, delicious.
