The second meal in our box was Pulled Chicken Tacos.
I will say this was probably my least favorite of our three meals. The star of the show was definitely the Jicama & Avocado salad, more on that later.
I had never seen jicama nor cooked with it. It basically looks like a potato and has a consistency somewhere between potato and pear, and the flavor has a bit of sweetness. I was pretty much sneaking snacks of jicama throughout this whole cooking process.
This salad was so delicious. It's one avocado, jicama, red onion, lime juice, cilantro, and s&p to taste.
Once the chicken is done, you remove to a cutting board and "pull" the chicken. The chicken then goes back into the sauce and is ready for filling tacos.
